Morning apple cake offers a delicious, comforting taste of fall
In a perfect world, green veggies would taste like honey and your favorite foods would never dream of being Migraine triggers. Since we don’t live in a perfect world, many of us try elimination diets or avoid food triggers to minimize our risk of an attack.
Policing our food choices – although worth the effort – can get exhausting, and we deserve to treat ourselves and our sweet tooths from time to time.
This simple apple cake recipe makes a delicious, comforting cake that is perfect for Sunday morning breakfast – or a fall treat any time of day.
Ingredients
For the apples:
- 2 apples – peeled, cored, and chopped (or sub berries or peaches)
- ½ teaspoon ground cinnamon
- 1 tablespoon brown sugar
- 1 tablespoon granulated sugar
- ½ teaspoon vanilla extract
For the cake:
- 1½ cups all-purpose flour
- ½ teaspoon baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
- ½ cup plus 2 tablespoons granulated sugar
- 1/3 cup vegetable oil
- 2 eggs
- ½ cup sour cream* (substitute with 1/3 c milk if sensitive to sour cream)
- ½ teaspoon vanilla extract
For the crumble:
- 3 tablespoons butter
- ¼ cup flour
- 2 tablespoons brown sugar
- 1 tablespoon granulated sugar
For the icing:
- ¼ cup confectioner’s sugar
- 1-2 tablespoons milk
Preparation
1 – Preheat oven to 350 degrees F. Grease a 9-inch cake pan.
2 – In a small bowl, combine apples, cinnamon, sugars, and vanilla. Set aside and let sit.
